Vanilla, Cashew & Fig Energy Balls with Ballerina Bites

For this latest recipe though, Ballerina Bites dropped in to Energetiks HQ to show us exactly how simple it is to make your own delicious, nutritious treats that are perfect for fuelling you through your day. Enjoy!

 

Vanilla, Cashew & Fig Energy Balls

Dancers know how to snack, and are experts in munching down something really quick just before class or rehearsal. That’s why you’re going to love my Vanilla, Cashew & Fig Energy Balls, as they give a quick energy boost and are very satisfying too.

They’re just the perfect little snack in your dance bag!

Ingredients

1 cup (180g) dried figs
1 cup (140g) raw cashews
½ cup (60g) quick oats
2 tbsp cashew butter
½ tsp vanilla powder

 

Method

Soak dried figs in boiling water for 15 - 30mins.
Drain figs, remove stems, and slice in half.
Add figs and remaining ingredients to a food processor, process until all ingredients come together and forms a ball.
Roll into 12 even balls and store in an airtight container for up to a week in the refrigerator.
