Ballerina Bites: Curried Pasta Salad

There's nothing quite as satisfying as some delicious al-dente pasta to fill you up and keep you energised all day. It also happens to be one of our all-time favourite comfort foods (but really, who can resist)! Especially when that pasta is a recipe made by our favourite culinary queen/professional dancer, Alexandra McMaster (aka. Ballerina Bites!). And what's the only thing better than pasta for busy dancers? Pasta salad of course! You can enjoy this bowl of goodness any time of the year, or package it up to take on the go. And this month's pasta salad recipe is looking particularly mouth-watering thanks to Alex's curry-inspired dressing. Alright... we'll stop making you drool, read on for the recipe!

 

Curried Pasta Salad

Do you have a special occasion, Birthday party or Christmas do coming up, and you’ve been asked to bring a plate..?

My Curried Pasta Salad is the perfect tasty addition to any gathering and is quite a step-up from your standard fruit salad. The recipe has only a few ingredients with a spicy dressing, making this salad a definite crowd pleaser!

 

Ingredients

1 ¾ cups gluten free, spelt or wholemeal pasta (any shape)
1 red capsicum
1 green capsicum
2 spring onions, thinly sliced
100g roasted unsalted peanuts

Curry Dressing

¼ cup apple cider vinegar
2 tbsp curry powder
2 tbsp coconut cream
2 tbsp olive oil
1 tbsp coconut sugarSalt & pepper to taste

Method

Cook pasta according to the directions on the packet. Once cooked drain and rinse with cold water to avoid sticking and overcooking.

Roughly chop capsicums and add to a large bowl along with spring onion, peanuts and cooked cold pasta.

Add all dressing in a jar and shake until well combined.
Pour dressing over salad and give a good toss making sure everything is coated.

Serve cold.
