Ballerina Bites: Chocolate Pudding

With at-home cooking still the norm these days due to social distancing we’re delighted to share this delicious new creation from professional dancer and self-taught kitchen whiz Alexandra McMaster! Her Ballerina Bites creations are the perfect blend of balanced, wholesome ingredients and sensational, tastebud-satisfying delicacies, and this month’s offering is no exception. This time around Alex has created an indulgent Chocolate Pudding - that’s deceptively healthy - and the perfect chocolate treat that you can enjoy guilt-free. See below for how she does it!

CHOCOLATE PUDDING



I’m still mind blown that a handful of whole food ingredients can produce something so decadent, you’d swear that it was bad for you. This Chocolate Pudding is a blend of natures priced ingredients, including medjool dates & avocado - don’t be put off by the avo, it creates the most wonderful texture and butteriness.


Ingredients

½ large ripe avocado
6 medjool dates, pitted
4 tbsp cacao powder
Pinch of salt ½ cup plant-based mylk of choice
2 tbsp maple syrup (optional)



Method

Into a food processor add all ingredients.

Pulse a few times to get things moving, before turning to a continuous blend.

Blend until super smooth - you may need to scrape down the sides throughout using a spatula.

Spoon pudding into small ramekins and enjoy now, or allow to set further in the fridge overnight.

I like my puddings best when they’ve had time to chill.

Serves 2

Store: In the fridge covered for up to 3 days.
